Biscuit-Top Peach Cobbler

This biscuit-top peach cobbler takes the cake for summer desserts. The sweet peaches contrast against the savory and buttery biscuit top in the most mouth watering way. Enjoy all summer long!

Ingredients

  • 6 ripe peaches
  • 1 tbsp maple syrup
  • 1/2 tbsp cornstarch
  • 1 cup flour
  • 1/2 tbsp baking powder
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 4 tbsp cold butter
  • 1 tbsp honey
  • 1/4 - 1/2 cup water
  • 1 egg (beaten for egg wash)
  • sprinkle sugar
  • ice cream for serving

Instructions

  • Pre-heat the oven to 350 degrees. Start by peeling the peaches then cut into slices. Add the peaches, maple syrup, and cornstarch to a bowl and combine. Add to a baking dish
  • Combine the flour, salt, cinnamon, and baking powder. Once combined, cut in the cold butter, or use a food processor to get the mixture to a sand-like texture
  • Then, add the honey and 1/4 water and mix to combine into a dough. If it doesn't fully combine, add the other 1/4 cup water to make sure you get a doughy texture.
  • Add the dough to the top of the peaches, brush with egg wash, and sprinkle with sugar (to your liking).
  • Place in the oven for 30 minutes or until middle is bubbling and top is golden brown. Serve with ice cream and enjoy!
