Cranberry Apple Sweet Potato Bake

A welcomed upgrade to the gelatin cranberry in a can. If you love the gelatinous cranberry – no shame, but give this recipe a try and you have may have a change of heart. This cranberry, apple, sweet potato bake makes for the best thanksgiving side dish (or any time of the year). Sweet potato casserole meets cranberry relish meets apple crumble- do I have your attention yet? Great.

How to truly make it a happy thanksgiving. Three reminders intended to help you recognize your emotions surrounding food while still enjoying all the holiday has to offer (stay tuned for more)!

  1. You don’t need to starve before thanksgiving or fast after. Our bodies are smart (much smarter than we credit them for) and can handle it (trust it).
  2. Enjoy what you want, not what you don’t. Use this holiday to hone in on your intuitive eating skills (more on that here and here) and chose what sounds good to you- not just something you feel obligated to eat
  3. While we can redirect what others say about diet culture, we can only truly control our own thoughts and words. Remember the power of your words and the affect they can have on others. No diet culture talk, no weight talk, no negative food labels talk, and NO commenting on others bodies (why are people still doing this?!).

Once again, I love seasonal cooking. This dish is the epitome of eating with the seasons (read more on that here). The tartness of the cranberries compliments the sweetness of the apples and sweet potatoes. All of which is juxtaposed with the lightly sweetened and salty crumple topping.

Aside from the cranberries and other produce, this dish is mainly pantry staples and spices (adding it to the list of why you should make this asap).

The (Cranberry Apple Sweet Potato) Process

The process is dare I say… simple?? But it truly is. The process is two main steps. First is combining everything in a large pan and cooking it down to meld the flavors together prior to baking. Then, is making the crumble topping and adding it over top. Once its in the oven, only 35 minutes until you have a side dish that boasts all the holiday flavors. Enjoy this cranberry apple sweet potato bake!

Cranberry Apple Sweet Potato Bake

This cranberry, apple, sweet potato bake is a welcomed addtion to any Thanksgiving feast. It's quick, easy and boasts all the holiday flavors!

Cook Time 35 minutes

Ingredients

  • 1 large sweet potato
  • 2 large green apples
  • 3 cups whole cranberries
  • 1/2 tbsp cinnamon
  • 1/2 tbsp cloves
  • 1/2 tbsp allspice
  • 1 tsp nutmeg
  • 6 tbsp butter
  • 2 cups rolled oats
  • 1/2 cup chopped walnuts
  • 1/4 cup flour
  • 1 tsp salt
  • 1/2 cup maple syrup
  • 1/4 cup water

Instructions

  • Preheat the oven to 375 degrees
  • Peel the sweet potato and apple and chop them into 1 inch chunks
  • Heat up a large pan and add 2 tbsp of the butter and let melt. Once melted, add the apples and sweet potatoes and keep the pan over medium high heat. After they have cooked for 5 minutes, add 1/4 cup of water and keep on the heat for an additional 5 minutes. Stir occasionally
  • While the apples and sweet potatoes are cooking, mix the oatmeal, crushed walnuts, flour, and salt in a bowl. Add 1/4 cup of melted butter and 1/4 cup of maple syrup
  • After the sweet potatoes and apples have cooked for 10 total minutes, add 2 cups of the cranberries, and all the spices: cloves, cinnamon, allspice, and nutmeg. Cook down for 5 minutes then add the remaining 1/4 cup of maple syrup and cook for 1-2 minutes.
  • Once the cranberries are bursting, add the remaining one cup of cranberries and then add the whole mixture to a 9x9 oven safe baking dish or any similar size. Add a dusting of cinnamon to the mixture prior to the crumble topping
  • Add the crumble topping over the mixture. Add 6-8 pats of butter on the crumble topping and pop in the 375 degree oven for 35-40 minutes. Once the top is golden brown it is finished!
