The best part about Thanksgiving second to the cornbread dressing?? The leftovers. Who says that all the good food has to end on Thursday ?! (not me). Enjoy the best of Thanksgiving all weekend long with this tantalizing leftover sandwich. This cranberry and brie leftover sandwich utilizes the best flavors of thanksgiving in a quick and easy (and straight up delicious) way!

Thanksgiving Waste

In my first post, I mentioned the importance of reducing food waste and ways to do that here. And speaking of food waste, thanksgiving is one of the biggest culprits annually. The damage: almost 200 MILLION pounds of turkey thrown away on thanksgiving each year (and that’s just the turkey) ! This sandwich was created with the intent of using each bit of leftovers from the historically most wasteful holiday. Whether it is making leftover meals for your family or donating the leftovers, lets do our part in reducing the absurd amount of food we throw away each year from Thanksgiving alone.

 

Abundant Ingredients

Quick easy and incredibly flavorful. To me, the true winner of this recipe, besides the award winning brie and cranberry combo, is the sourdough bread. I am a sucker for all bread, but for some reason sourdough sends this recipe over the edge. Other than that, all the other ingredients should truly come straight from your Thanksgiving feast. Six ingredients (and that includes the butter) and you have yourself a perfect day-after-holiday lunch.

The (Cranberry and Brie Leftover Sandwich) Process

As simple as making a sandwich, literally. All that is required for this recipe is to construct the sandwich and warm it up to melt the cheese and give the bread a slight crunch. That is it! Reducing waste in the tastiest way I know how. Enjoy this cranberry and brie leftover sandwich!

Cranberry and Brie Leftover Sandwich

Utilize all your Thanksgiving leftovers for this cranberry and brie sandwich. The good food doesn't have to end on Thursday!
Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients

  • 2 slices sourdough bread
  • 2 tbsp cranberry sauce/relish
  • 1 serving leftover turkey
  • brie cheese
  • 2 tbsp mayonnaise
  • 2 tbsp butter

Instructions

  • Build your sandwich by spreading the cranberry sauce on one piece of bread, then adding the turkey, and the brie on top (as much/little as you want). Place the second piece of bread over top to complete the sandwich
  • Next, take the mayonnaise and spread it on the outside of each piece of bread (yes, the outside. trust me). This is the secret to getting a golden brown crust. If you don't like mayonnaise, have no fear, you won't even taste it!
  • Then in a skillet or on a griddle, melt the butter over medium heat. Once the butter is melted, add the sandwhich to heat on one side. Check after 3-4 minutes and once golden brown, flip the sandwich. Do the same on the other side until golden brown and the cheese is melted.
  • There you have it, the easiest way to reduce waste and utilize allll those thanksgiving leftovers. Enjoy!
